35 mins prepServes 4
A delicious and detailed recipe for a homemade rib sandwich, featuring slow-cooked ribs coated in a mustard and dry rub, finished with a rich chipotle molasses BBQ sauce, and topped with a fresh onion cabbage slaw and pickles on a brioche bun.
1. To make the ribs, coat the rack in mustard and then your dry rub. Wrap tightly in tin foil and place on a baking tray in the oven at 275 degrees for 4 hours.
2. To make the BBQ sauce, add all your ingredients to the pot and blend. Cook for about 15-20 minutes or until desired consistency.
3. To make the slaw, add onion, cabbage and parsley. Then your vinegar and oil, salt and pepper. Mix with your hand and sort of squish the mixture to soften the cabbage.
4. When the ribs are done, unwrap them and coat with bbq sauce. Put back in the oven to broil for about 5 minutes then coat them again and back in the oven for 1-2 minutes.
5. Remove the bones, they should easily slide out.
6. Put your bottom bun down, a portion of your ribs, some sliced pickles, slaw mix, and top with bun. ENJOY.
